Louis Pasteur requests a key ingredient that would lead to his discovery of microbial fermentation.

LOUIS PASTEUR (1822-1895) Autograph Letter Signed, "L. Pasteur," 1 page, 5.25" x 8.25" on Universite de France, Ecole Normale Superieure letterhead, Paris, March 28, 1865 in French to "Mon cher Cherrier," concerning viticulture. Usual folds some contemporary ink smudges, else fine condition.

Pasteur writes in part (translated): “Send me please the saccharoles that you have at the moment… Send me others, if you can, without too much trouble and with certificate of origin of the wines….”

Pasteur references “saccharoles,” the syrupy compound of sugar connected to the fermentation process. The following year, he proved to the wine industry fermentation involved biological organisms—published in a work entitled, Etudes sur la Vin (1866).This work became the foundation for the process of partial sterilization commonly known as “Pasteurization.”
